In a bowl, toss the tofu with soy sauce, cornstarch, and sesame oil. Spread the tofu cubes on the baking sheet and bake for 20-25 minutes until crispy, flipping halfway through.
- Make the peanut sauce: In a bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, sriracha, garlic, and water until smooth. Adjust the consistency with more water if needed.
- Assemble the bowls: Divide the cooked rice into bowls and top with mixed veggies (you can steam or sauté them lightly). Add the crispy tofu on top.
